Chick Pea Stuffed Endive

One of my favorite easy to make snacks or appetizers. Always a hit with my guests and my clients.

One of my favorite easy to make snacks or meals.

Chick Pea Stuffed Endive

  • I can Eden Organic 2 Chick Peas (or soak & cook your own)
  • 1 c. halved organic grape tomatoes
  • 2 cloves of chopped garlic
  • 1 tbsp of Olive Oil
  • 1 tbsp parsley
  •  2 tbsp oregano (dried or fresh)
  • Sea Salt to taste
  • Endive Leaves

Directions:

  1. Drain and rinse Chick Peas
  2. Add all the ingredients except endive
  3. Roast in oven at 400 degrees for about 20-40 minutes (depending on your preferred level of crispiness)
  4. Spoon into Endive Leaves and serve.  You can also eat cold the next day.

*Sometimes I add chopped spinach or swiss chard. Adds an extra element of taste and nutrition.
