Citrus ScallopsĀ  over Fresh Greens-serves 4

  • 1 pound of fresh sea scallops
  • 1 lemon
  • 1 lime
  • 2 tbsp Olive Oil
  • 1 tbsp Dijon Mustard
  • 2 tbsp chopped shallots
  • 4 cups of mixed greens-put on a platter
  • Celtic sea salt
  • Freshly Ground Pepper

Directions:

  1. Wash & dry scallops
  2. Zest lemon & lime over scallops & add salt & pepper (coating both sides)
  3. Juice lemon & lime & 1 tbsp of Dijon mustard & set aside.
  4. Heat 1 tbsp of oil in a hot iron cast pan.
  5. Add scallops & brown on each side for about 3 minutes
  6. Remove scallops and place on platter of greens
  7. Stir in 1 tbsp of olive oil into brown bits in pan
  8. Add chopped shallot
  9. Saute until browned
  10. Add citrus juice/mustard mixture, stir together and pour over scallops & mixed greens.
