Coconut Almond Apricot Berry Energy Bars

A yummy gluten free snack to energize you

Prep time: 10 minutes Cooking time: 20 minutes 12 servings

Ingredients:

  • ¾ cup unsulfured apricots, minced
  • 2 cups raw almonds
  • ¼ cup of unsulfured dried berries, minced
  • 1 cup unsweetened coconut flakes
  • 1/3-cup local honey

Directions: 

  1. Pre-heat oven to 350 degrees.  Line a 9 ½ x 11 glass baking dish with parchment paper or grease with coconut oil.
  2. Place almonds in a food processor to roughly chop
  3. Place apricots & berries in a blender or food processor and pulse until finely chopped.
  4. Add chopped nuts, chopped apricots and coconut to a large mixing bowl.
  5. Mix in honey a bit at a time and mix until mixture is evenly sticky.
  6. Press mixture into lined baking sheet with a spoon and bake for 20 minutes or until just browned.
  7. Let chill in the freezer for 10 minutes, cut into bars and wrap in parchment paper.
  8. Store extra in plastic bags in your freezer. They will unthaw quickly
  • You can just use apricots or berries. I personally like apricots mixed with a berry medley.

These are great for a snack or breakfast on the go.
