Green up Quinoa Quiche Muffins

So tasty & ideal and ideal for a breakfast on the go.


  • ½ cup quinoa, rinsed & drained
  • 1 tbsp sunflower or olive oil.
  • 2 tbsp olive oil.
  • 1 Swiss chard, chopped into bite sized pieces (or spinach)
  • I bunch of Kale, finely chopped
  • 2 cloves garlic, crushed
  • 1 large onion, finely chopped
  • ½ red pepper, diced
  • 1 tomato, diced
  • ½ cup Manchego cheese, grated (or another hard cheese) or ¼ cup of nutritional yeast
  • 3 eggs, lightly beaten
  • Himalayan or Celtic sea salt & pepper to taste
  • Spice it up with a sprinkle of crushed red pepper
  • (Chefs choice to add both tomato & red pepper or just one)

  1. Add 1 cup of water and season with salt. Cover and bring to a boil. Reduce heat to medium low and simmer covered for about 10 minutes or until all liquid is absorbed.
  2. Remove from pot and transfer to into a large mixing bowl.


  1. Preheat oven to 350
  2. Heat a large cast iron pot over medium heat. Heat 1 tbsp sunflower or olive oil.
  3. Add crushed garlic and once golden add onions and sauté until browned.
  4. Add red pepper. Sauté 1-2 minutes.
  5. Add 1 more Tbsp of oil, then add kale and cook for 3 to 5 minutes stirring frequently.
  6. Add Swiss chard and cook for 2 more minutes.
  7. Add tomato and saute 1 to 2 minutes more.
  8. Mix greens, garlic, red pepper, tomato, and onion with the cooked quinoa.
  9. Stir beaten eggs into quinoa mixture and add cheese. Season with salt and pepper and add crushed red pepper.
  10. Brush a little olive oil on the bottom of each cupcake liner
  11. Then fill each liner with mixture.  Bake for 20-30 minutes until golden.

Serve warm although you can eat cold.

Makes 1 dozen muffins or 30 mini muffins.
