Grilled Chicken Lettuce Wraps with Mango Avocado Salsa

Makes a great family dinner. Your kids might enjoy it with tostadas.

Grilled Chicken Lettuce Wraps or Tostadas

Ingredients:

  • 1 ½ lbs of chicken cutlets (these will be cut into strips when cooked)
  • ½ c fresh lime juice or bottled
  • ¼ cup Tamari (Gluten-free soy sauce)
  • ¼ cup olive oil
  • 1 tbsp honey
  • 2 tsp minced garlic
  • 1 ½ tsp chili powder

Directions:

  1. Marinate for at least 4 hours or over night
  2. Take out 20 minutes before grilling
  3. You can also bake or pan fry
  4. Depending on thickness grill for about 10 min on each side or bake at 350 for 20 -30 minutes or pan fry in heavy skillet for about 5 minutes each side
  5. Slice into strips and serve in Romaine Lettuce Wraps or gluten–free tortillas. (Try organic corn or brown rice)
  6. Brush tortillas with olive oil and heat in oven at 400 for 5 minutes or just serve soft.
  7. Serve with mango avocado salsa

Mango Avocado Salsa

Ingredients:

  • 1 chopped avocado
  • ½ cucumber peeled & diced
  • ½ chopped mango
  • ¼ diced red onion
  • 2 tbsp chopped fresh cilantro
  • Juice of 1 fresh lime
  • Sea salt to taste
  • Optional -1 tsp grated fresh ginger

Mix & serve
