Quinoa Fiesta Romaine Wraps

Quinoa Fiesta Romaine Wraps

Makes 6 servings

Ingredients:

  • 4 cups cooked quinoa
  • 2 cups edamame
  • 1 zucchini peeled & chopped (cucumber is fine)
  • 1 red onion, diced
  • 1/4 c raw apple cider vinegar
  • 1/2 c. olive oil
  • 2 Tbsp. fresh lime juice-2 limes
  • 1 tsp Celtic Sea Salt
  • 4 Tbsp. fresh cilantro
  • 1/2 Red Pepper, diced
  • 1 mango, diced
  • 1 avocados, pitted and diced
  • 12 romaine lettuce leaves
  • You can also add Black Beans (I prefer Eden Organic)

 Directions:

  1. Rinse 2 cups of quinoa and cook covered in 4 cups of water. Bring to a boil and then simmer for 10-15 minutes
  2. In a small bowl combine olive oil, apple cider vinegar, lime juice, and sea salt. Toss with quinoa.
  3. Stir in cilantro, red pepper, mango, zucchini, edamame,red onion, and top with diced avocado.
  4. Include 2 pieces of Romaine Lettuce with each serving.
