Revitalizing Red Quinoa Wraps. Make a delicious & nutritious meal.

Revitalizing Red Quinoa Wraps

  • 2 c. Red Quinoa (rinse before cooking)
  • 4 cups of water
  • 1/3 c. Extra Virgin Olive Oil
  • 1 avocado chopped
  • 1 chopped red onion
  • Juice of 2 limes
  • 1 c. chopped fresh cilantro
  • Celtic Sea Salt to taste
  • Optional Steam Collard Greens –to make wraps
  • You can also use Romaine Lettuce for wraps

1. After rinsing quinoa, put it in a pot with 4 cups of water and bring to a boil.
2. Cover and simmer for about 10 minutes or until water is absorbed.
3. Remove from heat and let cool a bit.
4. Add oil, onion, avocado, limejuice, cilantro & sea salt
5. Optional-wrap in collard greens-remove stems and blanch greens in boiling water for 30    sec., roll up with quinoa and serve.

Serves 6.

This recipe is Gluten-free & Vegan.

Whether it be a cleanse, a teachers’ luncheon, a party, these are always a  favorite.
