Sunny Yellow Split Pea Soup

Sunny Yellow Split Pea Soup

  • 2 cups dried yellow split peas
  • 8 cloves of garlic
  • 1  large onion, chopped
  • 2 tsp celtic sea salt
  • 6 cups water
  • 1/4 cup of fresh lemon juice (optional)
  • 2 tbsp chopped fresh dill (or 2 tsp dried dill)
  • Freshly ground  black pepper to taste
  • Sprinkle with paprika  (optional)
  • 1 sprig of fresh dill  (optional)

Directions

  1. Rinse peas and combine with garlic cloves, onion, salt and water in a  large pot
  2. Bring to a boil, cover, and simmer for 30 minutes.
  3. Blend soup with a handheld blender in the pot until smooth.
  4. Add lemon juice, dill, and paprika and season with pepper to taste and serve.

Makes 4 ample servings.
