Sweet Potato & Kale Quinoa Medley

Sweet Potato & Kale Quinoa Medley

Ingredients:

  • 1Tbsp of Sunflower oil
  • 2 tbsp Extra Virgin Olive Oil
  • 2 Garlic cloves. thinly sliced
  • 1 bunch of Kale
  • 3-4 Sweet Potatoes, peeler
  • 1 16 oz. can Black Beans, rinsed & strained (Eden Organic)
  • ¼ cup sun dried tomatoes, chopped
  • 1 red onion chopped
  • Celtic Sea Salt & Ground Pepper to taste
  • Triple Blend Flakes
  • 2 Cups of quinoa, cooked

Directions:

  1. Peel sweet potatoes and boil in a pot of water until tender and then strain.
  2. Heat sunflower oil and add garlic. Saute until golden
  3. Roll up Kale and chiffonade (cut into ribbons) and sauté about 4 minutes.
  4. Mix in black beans, sun dried tomatoes, and red onions. Saute for 2 more minutes.
  5. Add juice of one lemons
  6. Mix in quinoa
  7. Season with salt and pepper and Triple Blend Flakes
  8. Add remaining  olive oil, mix together & serve warm.

Quinoa instructions:

  1. Rinse 1 cup of quinoa and put in a pot with 2 cups of water
  2. Bring to a boil, lower flame & simmer  about 15 minutes (until all liquid is absorbed)
