Swiss Chard Roasted Beet Medley

I always have essentials like black beans, quinoa, lemon, and garlic on hand.

Swiss Chard Roasted Beet Medley

  • 1 tbsp Sunflower oil
  • 1 -2 Tbsp Extra Virgin Olive Oil
  • 2 cups of cooked Quinoa.
  • 1 Bunch of Swiss Chard, stems removed & chopped
  • 1 can of Eden Organic Black Beans, drained & rinsed
  • 2 Roasted Golden Beets, chopped
  • 4 cloves of garlic, chopped
  • ¼ cup chopped sun dried tomatoes
  • Celtic Sea Salt or Himalayan Salt
  • Freshly Ground Pepper
  • 1 juice of 1 fresh lemon


  • Crushed Red Pepper
  • Triple Blend Flakes
  • Flavor with lemon zest


Roasted Golden Beets; Roast the beets with skin on in a ceramic or glass-baking dish with a 1/4-inch of water at 400 degrees for about 30 minutes or until fork tender. Peel the beets while still warm & chop.


  • Rinse 1 cup of quinoa.  Bring 2 cups of water to a boil.
  • Add quinoa. Cover & lower heat to a simmer for 10 minutes.
  • While quinoa is simmering Chiffonade the Swiss Chard kale –(roll up and slice into strips)
  • Rinse and add the black beans.

Swiss Chard Saute

  1. Heat 1 tbsp of Sunflower Oil (olive oil is ok but this oil has a higher cook point)
  2. Added chopped garlic and sauté until golden
  3. Chiffonade the Swiss Chard –(roll up and slice into strips). Add to oil.
  4. Saute about 3 minutes. Add freshly squeezed lemon juice.
  5. Add Black Beans, heat and stir for 2 minutes
  6. Add chopped sun dried tomatoes and golden beets, cook for 2 minutes
  7. Stir in cooked quinoa. Mix in 2 tbsp. of olive oil.
  8. Add salt & pepper to taste and optional seasonings.

This was a big hit on my Diabetes Wellness Class. On man didn’t think he was going to like it but when he tried it he couldn’t believe how good it tasted.
