Vegan Caramel Apples

Don’t you just love it when you learn how to upgrade a traditional treat into an even tastier delight?

Dr. LJ’s Natural Wellness helped me do just that. 

Vegan Caramel Apples

 I never loved Candied Apples anyway but I  fell in love with this scrumptious treats.

Vegan Caramel Apples

Ingredients:

  • 1 cup medjool dates
  • 1/3 to ½ cup vanilla almond milk (unsweetened)
  • 1 tsp. virgin coconut oil
  • 1 ½ tsp pure vanilla extract (alcohol-free is best)
  • 1 Tbsp. maca
  • pinch of sea salt
  • 4-6 Apples
  • crushed pecan pieces

Directions:

  1. Pit dates and cut into smaller pieces.
  2. Place in blender with 1/3 cup of almond milk, coconut oil, salt and maca powder.
  3. Blend until smooth, using spatula to scrape down sides until you have caramel consistency.
  4. Add more almond milk if needed.
  5. Pour into shallow bowl.
  6. Peel and core an apple and dip each slice on to the caramel mixture. You can also spread the mixture on to each slice.
  7. Dip slices into the crushed pecans.
  8. Eat em up and enjoy the delicious taste.
